1 cup water 3/4 cup sugar 8 ounces sliced ginger with peel 4 cups sparkling water
How to Make It
In a small sauce add water and sugar over medium-high heat. Cook until sugar is dissolved.
Turn off heat and add ginger. Cover and let steep overnight. or until very fragrant. Strain ginger from syrup into a small bowl.
In eight glasses add ice, 1/4 cup of simple syrup, and top with half a cup of sparkling water for each.
