Ingredients
- 2 bacon slices, chopped
- 2 tablespoons apple cider vinegar
- 1 1/2 tablespoons maple syrup
- 1 tablespoon olive oil
- 1 1/2 teaspoons grainy mustard
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 8 ounces sliced lacinato kale (about 6 lightly packed cups)
How to Make It
Cook chopped bacon slices in a small skillet over medium until crisp; remove bacon, reserving 1 Tbsp. drippings in pan. Over low heat, whisk in vinegar, maple syrup, olive oil, mustard, salt, and pepper. Toss warm dressing with kale; sprinkle evenly with bacon.
