Quick Mongolian Beef Stir-Fry

Ingredients

2 tablespoons canola oil, divided 12 ounces flank steak, thinly sliced 1/2 teaspoon black pepper 1/4 teaspoon kosher salt 1/4 cup dark brown sugar 3 tablespoons reduced-sodium soy sauce 2 tablespoons unseasoned rice vinegar 3 cups fresh broccoli florets 3 cups sliced red bell peppers (about 2 medium) 2 cups hot cooked brown rice 1/2 cup chopped green onions (green parts only

  • In a large ziplock bag add the sliced flank steak and cornstarch. Toss the beef to coat evenly. Heat a large skillet to high heat and add the vegetable oil. Once heated, add the steak in a single layer and cook on each side for about a minute until the edges just start to brown. Once the steak is cooked, remove and set aside on a plate.
  • In a small mixing bowl combine soy sauce, brown sugar, water, ginger, and garlic. Add the sauce to the pan and bring to a boil.
