Ingredients
6 ounces soba noodles
1 1/2 cups diagonally sliced sugar snap peas
2 1/2 tablespoons fresh lime juice
1 tablespoon lower-sodium soy sauce
2 teaspoons dark sesame oil
1/2 teaspoon sambal oelek
1/4 teaspoon kosher salt
1/2 cup thinly sliced radishes
1/4 cup chopped fresh mint
8 chopped pork slices from Grilled Pork Tenderloin with Orange-Sesame Asparagus and Rice
Preparation
Cook soba noodles according to package directions. Add sugar snap peas during last 1 minute of cooking. Drain; rinse with cold water. Drain. Combine lime juice, soy sauce, sesame oil, sambal oelek, and salt in a large bowl. Add noodle mixture, radishes, mint, and chopped pork slices; toss gently to combine.
