Spicy Peanut Soba Noodle Salad

Ingredients

For the salad:

  • 10 oz cooked soba noodles (see notes)
  • 1 lb. of cooked shredded chicken (shredded rotisserie chicken works too)
  • 2 bell peppers, cut into stripes (red, yellow, orange green, whatever you’ve got on hand)
  • 1/2 cup of matchstick carrots
  • 5 scallions, chopped (whites and greens both)
  • 1/4 cup cilantro leaves
  • 1/4 cup peanuts
  • salt and pepper to taste

For the salad dressing:

  • 2 tablespoons sesame oil
  • 2 tablespoons minced garlic
  • 2 tablespoons minced ginger
  • 5 tablespoons peanut butter
  • 6 tablespoons low-sodium soy sauce
  • 3 tablespoons honey
  • 1/4 cup water
  • 2 tablespoons rice vinegar
  • 1 tablespoon sriracha sauce
  • 1/2 teaspoon red pepper flakes

Instructions

    1. For the salad dressing: Heat the sesame oil in a skillet, add the ginger and garlic and sauté for 2 minutes. Do not let the oil burn, you want the flavor to just infuse into the oil.
      In a blender or food processor combine the infused oil, peanut butter, soy sauce, honey, water, rice vinegar, sriracha sauce, and red pepper flakes. Blend until all the ingredients are completely mixed.
    2. For the salad: In a large bowl, toss the noodles, shredded chicken, bell peppers, carrots, scallions, cilantro leaves, and peanuts. Pour the dressing over the salad.
