Ingredients
Waffles
4 eggs
2 cups (8 oz.) shredded cheddar cheese
2 tbsp fresh chives, chopped
salt and pepper
Toppings
4 eggs
8 (8 oz.) slices of bacon, good quality
8 (5 oz.) cherry tomatoes, sliced
2 oz. (2 cups) baby spinach Instructions
Pre-heat your waffle maker.
In a large, cold frying pan, arrange the bacon slices and then turn up the temperature to medium heat. Cook the bacon for about 8-12 minutes, turning occasionally until crisp, or to your preference.
Set aside on a paper towel to drain while you cook the chaffles. Keep the bacon grease in the pan.
Place all of your waffle ingredients into a mixing bowl and beat to combine.
Lightly grease your waffle iron and then evenly spoon the mixture over the bottom plate, spreading it out slightly to get an even result.
Close the waffle iron and cook for approximately 6 minutes, depending on your waffle maker.
While the chaffles cook, crack your eggs into the bacon grease in the frying pan and cook gently until done.
