¼ cup extra-virgin olive oil
3 tablespoons red pepper jelly
2 tablespoons lemon juice
1 tablespoon finely chopped shallot
1 teaspoon whole-grain mustard
¼ teaspoon salt
¼ teaspoon ground pepper
1 5-ounce package mixed salad greens
2 small carrots, shaved into ribbons with a vegetable peeler
1 small red beet, peeled and cut into matchsticks
¼ cup pickled red onion, store-bought or homemade (see Tip)
¼ cup unsalted shelled pistachios, toasted and chopped

Step 1
