Broccoli-Avocado Chicken Sandwich

INGREDIENTS
  • 1/2cup broccoli florets
  • Salt
  • Pepper
  • 1/4medium avocado
  • 1/8 teaspoon cumin
  • 2slices whole wheat bread
  • 3ounces cooked chicken legs (about 2 medium drumsticks), skin removed
  • 1/4 cup grapes, very thinly sliced
  • 1tablespoon chopped parsley
DIRECTIONS
  1. Place a small, lidded skillet over medium heat. Add broccoli and 3 tablespoons water, season with salt and pepper, cover with lid, and cook until broccoli is bright green and al dente, about 4 minutes. Drain any remaining water, cool slightly and finely chop.
  2. In a small bowl, mash broccoli, avocado, and cumin with a fork. Season with salt and pepper.
