Sometimes, you just need a quick breakfast for yourself and no one else. After all, you deserve a fresh, hot, lovingly made morning meal. (And it’s under 350 calories!) Think of it as an expression of self-care—because making time for yourself is important. This skillet breakfast comes together in only 10 minutes and uses ingredients that you’re likely to have on hand. It’s a perfect use for somewhat stale tortilla chips or the crumbs that fall to the bottom of the bag.

How to Make It

Step 1

Preheat broiler to high.

Step 2

Heat a small, 8-inch skillet over medium-high heat. Coat pan with cooking spray. Scatter chips into pan.

Step 3

Combine salsa, cumin, and eggs in a small bowl; stir with a whisk or fork until well combined. Pour egg mixture evenly over chips in skillet. Sprinkle with tomatoes, scallions, and cheese. Cook 2 minutes over medium-high.

Step 4

Place skillet in oven. Broil just until eggs are set, about 1 minute. Serve with hot sauce, if   sauce opcionaal
