Fajita Chicken Salad 11

INGREDIENTS

Juice of 1 lime

1/8 c. extra-virgin olive oil

1/2 tbsp. honey

1/4 tsp. ground cumin

1/8 tsp. crushed red pepper flakes

Kosher salt

Freshly ground black pepper

2 bell peppers, thinly sliced

1/2 medium white onion, thinly sliced

1 large head of romaine, chopped

1 avocado, thinly sliced

DIRECTIONS
  1. In a small bowl, whisk together lime juice, oil, honey, cumin, and red pepper flakes. Season with salt and pepper.
  2. In a large nonstick skillet over medium heat, heat Tyson frozen strips until warmed through, 3 to 5 minutes.
  3. Add peppers and onions to skillet and increase heat to medium-high and grill until charred and soft, 10 minutes.
  4. In a large bowl, combine romaine, chicken, peppers and onions, and avocado and toss with dressing.
