Sheet Pan Maple Mustard Salmon, Potatoes, and Brussels Sprouts

INGREDIENTS

pound red bliss potatoes, quartered

Brussels sprouts, halved

tablespoons canola oil

tablespoon fresh sage, chopped

teaspoons maple syrup

teaspoons spicy brown mustard

salmon fillets, skin removed (3 ounces each)
DIRECTIONS
Heat oven to 425° and line a sheet pan with parchment paper.
In a bowl, toss potatoes, sprouts, canola oil, sage, salt, and pepper. Arrange in an even layer on sheet pan and roast 25 minutes.
In another bowl, stir together syrup and mustard. Season salmon on all sides with salt and pepper, then place on sheet pan with potatoes and sprouts. Brush with maple-mustard mixture.
